Chef Brian Bowden New Executive Chef at Sperry’s

Dreams do come true.

One of my favorite local chefs, Brian Bowden, is now serving as Executive Chef at Sperry’s Restaurant at 30 1/2 Caroline Street in Saratoga Springs.

Bowden was the original chef of Javier’s, and then at Mingle on the Avenue, and then spent a short time over the summer at 15 Church. He also was the private chef I hired for my sister’s bachelorette party, and he’s one of the most talented chefs I’ve had the pleasure of chatting with and getting to know.

Now, he’s back at it and I couldn’t be more thrilled with his placement. Sperry’s and I have had a pretty good relationship over the years, but I’m pretty sure that relationship is going to become way more serious now that Bowden is cooking there!

According to Steve Barnes over at The Times Union, “Now a week into the job, Bowden tells me he plans to focus the menu more closely on classic steakhouse themes with contemporary flourishes as daily specials. (He brought in a 44-pound halibut for this past weekend’s features.) The first full menu to reflect Bowden’s influence will launch in the second or third week of April, he tells me. He will be sourcing some of his steaks from Edelweiss Veal in Albany, which has begun dry-aging beef.”

It’s safe to say I’ll be getting over to Sperry’s soon to get a taste of what Brian’s cooking – and I can’t wait until I do!
